

WHAT ARE YOU DRINKING?
ESPRESSO - we call it a SHORT black
Intense and flavourful.
A 50g extraction of coffee, bursting with flavour. We use a fast pre-infusion to saturate the coffee, followed by a “bloom” for 20-30 seconds, and then a pressurised extraction to get all of the flavour into your cup.
AMERICANO - we call it a LONG black
Balanced, clean and sweet.
A 140g extraction of coffee, offering all of the flavours possible. Our signature style of black coffee in Melbourne. This extracts the most that we can from each coffee, while keeping it balanced. Similar start to our espresso, but we never let the pressure go higher than 1 bar - normal espresso is brewed at 9 bar. You get flavour, body, texture, sweetness, aroma, and balance, and it’s not too strong.
DRIP - we call it a FILTER 3 (and so does Scott Rao!)
Light and delicate, without sacrifice.
A 250g extraction of coffee, but with more precision and control than even a world brewers cup champion can do. A no-bypass style of filter coffee, allowing us to use our machine to dose water perfectly to bring out delicate flavours and aromas from every coffee.

All extractions are using flow rate control on our Decent espresso machines. We brew with precision, and a considered approach to all parts used, from shower screens, to baskets, and every step in between.
We utilise the technology that we have to create extractions that are not possible on other machines. These create flavourful and aromatic drinks, allowing more people to enjoy coffee in new and exciting ways. None of the brews that we have programmed are “traditional” and all offer an exciting and new way to taste coffee.
All brews are prepared with a “filter” or “light” roast of coffee, and all use the same dose of 18g. This way we can show you how can taste many different flavours in the same coffee, if you brew it differently.

Core Roasters started in Melbourne in 2020, off the back of Michael’s 20+ years experience in Melbourne coffee, and Dani’s love language of feeding people.
We still operate with a very small team, whose dedication to providing exceptional experiences means we can always be considered in every aspect of what we do and focus on quality. We are a sustainable coffee roastery/bakery/chocolate factory/tea importer/amusement park - though we’d prefer it to be known as a coffefferie & croissantararium, please, because while we take what we do very seriously, we also like to have fun and enjoy it.
We put a great deal of thought into the coffees that we choose to share, and we try to showcase origins or varieties that are sometimes less famous or popular. Our goal is always to make coffee accessible to more people, and to show that even the lesser known coffees can be of very high quality. We do also share coffees from very well known producers because we value their work in our industry, and their ability to guide a new generation of coffee growers towards quality coffee.
We have a long history in the world of coffee, and have many connections with coffee growers in many countries, and we celebrate these relationships by sharing some of the best coffees in the world.
