We are considered in all our choices, we move with intention, and we care for those in our community. We put a great deal of thought and effort into everything we choose to share, and try to do so in an accessible way. We operate with a very small team, whose dedication to providing exceptional experiences means we can always be considered in every aspect of what we do with a strong focus on quality and detail. Now, we’ve reached a time where we need someone else to take part in what we do, so we can all focus on our strengths, and continue to grow and improve.

Who you are:
Someone driven, with a desire to learn, build relationships, and improve things for those around them. Obviously you need to be able to make coffee, but you also need to be self-motivated, observant, and have initiative. You need to want to keep on top of the little details that matter. Most of all, you need: a calm personality, to communicate effectively, and be someone who can fit into our peaceful space and switch on when it’s busy.

The boring shit:
This role is full-time, Wednesday to Sunday, with the same roster every week to provide you with stability. You will be working on our coffee bar, patting dogs, and looking after our community of customers. Full working rights, and fluent communication in English are required. We are happy to negotiate salary based on your experience, who you are and how you fit in with us.

What you’ll get:
You’ll have access to every single aspect of the coffee industry - from origin to cup - and will be surrounded by wonderful, skilled, passionate people who care and want to help you achieve the most you can. If you’re a coffee person, this is your chance to be exposed to a depth of knowledge that will push you to a new level.

It’s that time of year again, when we have a proper look at our numbers for the year, look at what’s coming for the next 12 months, and also look at all the stupid shit Michael has done with the books 🤦‍♂️

Thankfully, we didn’t mess it up too much this year, if you don’t count the cost of being stubborn and paying more for our green coffee because we wanted you to have the best brews 🤷‍♂️ but we love you, so it’s worth it.

Sadly though, like every other business in hospitality, from July 8th (because we forgot to post last week 😬), there is going to be a bit of a price bump across food and beverages. We want to keep bringing you considered things, things that celebrate those who created them, and the joyous flavours they, and we, have created. As a small business things run on a knife’s edge pretty much all the time, and we will never be able to express the gratitude we feel for your continued support. If we could do all this for free for you we would, but sadly we’ve gotta keep paying bills to keep the doors open 😢

IT’S BACK! Which one? So many things! Everyone’s fave Apple & Yuzu Custard, the Pandan Kaya Croissant Toast (a self-buttering version of the traditional, but the butter is laminated throughout the toast in croissant form) and exactly a year to the day, our Thai Milk Tea w Black Sticky Rice & Persimmon - a darker, more autumnal version of the mango sticky rice croissant that popped off a few months ago. Oft-imitated by other Melbourne bakeries (iykyk), because we can only assume that they feel bad you missed out when we sold out lol

In this episode of “will it croissant?”, we’re actually playing a different game: “it will croissant”, because there are no rules. You’re not our real dad.

@danisunario is back, and has baked lots of new and old favourites in the cabinet, as well as lots of (croissantified) variations on things we want to eat or things we grew up eating: mochi, yakult, black sesame, rendang, oat biscuits (lol Michael).

Also launching the new P@lestini@n Pastry Pal today - the Core Croissant iteration of a Chicken Musakhan. Money from the sales of this pastry will go directly to grassroots aid delivering food, fuel & supplies straight to families on ground in G@z@.

Back when we first opened (three years ago!), Dani did a dumb thing and made a delicious, labour-intensive carrot cake that hit all the right flavours and textures. Not a day goes by without one of our regulars requesting it. Amazing, great, thanks to all of you dedicated Core Carrot Cake fans, but also, NO THANKS it’s too much work and Dani doesn’t have the time.

Anyway, here’s the compromise: driven by @michael.g.allen’s current hyper fixation craving of donuts, and @danisunario gamifying her life, she’s finally unlocked level 69 (nice!) of bakery recipes with donuts - a brown sugar spiced carrot cake brioche fried donut, w whipped creme fraiche cheesecake, maple glaze and candied carrot - to be exact.

Some of the things you all loved about the carrot cake, some new fun elements too. Long John style.

Back when we first opened (three years ago!), Dani did a dumb thing and made a delicious, labour-intensive carrot cake that hit all the right flavours and textures. Not a day goes by without one of our regulars requesting it. Amazing, great, thanks to all of you dedicated Core Carrot Cake fans, but also, NO THANKS it’s too much work and Dani doesn’t have the time.

Anyway, here’s the compromise: driven by @michael.g.allen’s current hyper fixation craving of donuts, and @danisunario gamifying her life, she’s finally unlocked level 69 (nice!) of bakery recipes with donuts - a brown sugar spiced carrot cake brioche fried donut, w whipped creme fraiche cheesecake, maple glaze and candied carrot - to be exact.

Some of the things you all loved about the carrot cake, some new fun elements too. Long John style.

Who is John, and why is he Long? Find out this weekend only, probably from 10am-ish. Or have a read on the etymology subreddit, we’re not your real dad.

And while it ain’t an Australian birthday party without Fairy Bread, it also ain’t a South East Asian birthday party without Black Forest Cake, so we have both. But in all seriousness, it’s kind of a big deal as a hospo business in the current climate to not only survive this long, but be able to do what we are passionate about, support our people, and have our people support us back.

To all of you who have been regulars since day one, and to all those who have joined us along the way: thank you, we appreciate you more than you’ll ever know.
