This year you'll be getting some absolute stunners, and in no particular order they are:

Sitio San Roque - a beautiful naturally processed coffee from our mates in the Philippines
Finca La Bohemia - from a true legend of coffee in Colombia, and the actual mother of so many competition winners, a washed Geisha from Raquel Lasso.
Finca Buenavista - a really special variety called Bourbon Aruzi, Javier really knows how to make good clean fun.
Gambung - from some new partners in Indonesia, this is a coffee that truly showcases what we are about, people and flavour.

Oh and if you want to try our other seasonal only release of Reindeer Poop, add a 125g box to your cart with this and you'll get free shipping!

  • CORE INFO

Some boring shit first - These will be roasted and shipped once a week on Friday only through December - or you can come in to the roastery and see if we’ve got any stock left here!

What a f$%*#*$@ year! With so many wins, and sadly a fair few too many losses, 2024 has been a huge one for us, and our Core Community. Much like last year, as we celebrated family, and the opening of our roastery, this year we are celebrating community, through delicious coffees, and through Michael’s weird need for alliteration. Core Community Christmas Cube - yes Michael needs a holiday and some new ideas.

2024 saw the strengthening of some coffee busying relationships, and the forging of some new ones. We have even managed to track down some old friends and share their coffee as well. We got to celebrate constant acclaim for Dani’s outstanding pastry game, and even saw us being listed in the Good Food Guide Top 20 cafes in Melbourne.

But we’d not be here without all of you, our community. We love you all, and we thank you endlessly for your support. So celebrate with us, with these 4 stunningly exceptional coffees. Share them with your family and community, or honestly sit in a dark room by yourself and drink them all like Michael probably will.

Cheers to 2024, and we can’t wait to see what we can share with you in 2025!

  • BREWING SUGGESTIONS

We prefer our filter brews from a v60, but we won’t judge for use of anything at all to make yourself a coffee - even a (clean) sock.

Our recommended ratio when brewing filter coffee is 60g of coffee per litre of water. Simply scale this down, or up, for your desired size of brew.

With all methods, you’ll want: a grind size similar to granulated sugar, boiling water, and about 3 minutes of brewing time. This goes for v60, aeropress, plunger, and the (still hopefully clean) sock.

    Our favourite recipe for v60:

    • 20g of medium to coarsely ground coffee, it’ll feel a little like granulated sugar.
    • Set your kettle to boil, and ready your socks to be rocked.
    • We use a 60g bloom, with a swirl of the slurry to make sure it’s all wet. You can stir of that’s easier, just don’t rip the paper!
    • After that, when your timer is at 45 seconds, add more water to a total of 200g, and swirl gently.
    • Then finally at 1:15 on your timer, add the rest of your water, to 330g, and do one last little swirl.
    • Wait till it drains through, roughly 3:30 is a good time, pour into your favourite mug, and let those socks be rocked.
